Food is so much more than sustenance or satisfaction - it can either build us up or tear us down on an energetic level, with each meal we choose to enjoy. Conscious plant-based living does not need to be difficult, tasteless, or boring. Embracing a vegan diet can feel a little daunting at first, but after a few simple tweaks to your routine, you'll be cooking from a place of intuitive creativity to satisfy every craving.

Join Chef Lauren D'Agostino in the kitchen and learn more about creating mindful meals and unleashing your creativity through intuitive cooking. Enjoy a plant-based lunch cooking class focused on preparing simple seasonal soups and superfood salads, with Lauren's signature framework for building satisfying flavor. For dinner, try your hand at creating a warming curry bowl with seasonal vegetables, assorted grains and vegan proteins, topped with your choice of homemade curry sauce. 

These two classes will teach you everything you need to know about crafting simple and intuitive recipes this winter season for maximum vitality, joy, and wellbeing. You'll also sample some homemade vegan cheese and Chef Lauren's favorite whole-food plant-based sweets. 

Saturday we'll settle in to this mindful weekend with a grounding vinyasa flow and meditation led by Valerie Griffiths. Create space, both physically and mentally, to receive the abundance of plant-based food and information Chef Lauren has to share.

9:30 - 11:00 am Yoga and Meditation at the Breathing Barn

11:00 - 1:30 pm Plant-Based Cooking Class: Autumn Soup and Superfood Salad

2:00 - 3:00 pm Active Meditation Walk (Weather Permitting)

4:00 - 5:00 pm Essential Oils for Holistic Wellbeing

5:30 - 8:00 pm Plant-Based Cooking Class: Create a Curry Bowl

Sunday we'll begin the day with a mindful vinyasa flow and meditation led by Valerie Griffiths, and conclude the weekend with a seasonal plant-based brunch spread!

10:30 - 11:30 am Yoga and Meditation at the Breathing Barn

12:00 - 2:00 pm Celebration Brunch prepared by Chef Lauren
